Savory Mache and Gruyere Tart
Savory Mâche and Gruyère Tart
Makes one 10-inch tart or six (5-inch) individual tarts

1 recipe pastry dough*
1 tablespoon butter
1/2 cup chopped onion
4 ounces Epic Roots Mâche, rinsed
3/4 cup grated Gruyère cheese
4 eggs
1 1/2 cup milk or light cream
3/4 teaspoon sea salt
1/4 teaspoon black pepper


Serves: 6-8

Preheat oven to 350º. Roll out pastry dough on a floured surface to 1/8 inch thick and line the tart pan. Line the pastry shell with baking paper and fill with pie weights or dried beans. Bake 10 minutes, remove paper and weights, and bake for 5 more minutes. Set aside to cool. To prepare filling, melt butter in a large sauté pan, add onion and cook until soft. Add Mâche and stir until wilted, about 2 minutes. Set aside. Sprinkle the tart shell with cheese and Mâche mixture. Whisk together eggs, milk, salt and pepper and pour over the filling in the tart shell. Bake for about 30-35 minutes until crust is golden and custard is just set in the center. *See Basics for pastry dough recipe.
