Linguini with Mache Pesto
Linguini with Mâche Pesto

4 ounces Epic Roots Mâche, rinsed
2 cloves garlic
2 tablespoons pine nuts
1/2 teaspoon sea salt
1/2 cup Parmesan cheese, freshly grated, plus some for garnish
3/4 cup extra-virgin olive oil
1 pound linguini pasta, or about 6 cups cooked


Serves: 4-6

Reserve 4-6 bouquets of Mâche for garnish. Combine garlic, pine nuts, salt and Mâche in a food processor; grind into a paste. Add cheese and grind until incorporated. Add olive oil and blend until combined. Cook linguini in boiling salted water to al dente, about 9-12 minutes. Drain and immediately toss with pesto, using as much as desired. Divide between shallow bowls and garnish with Parmesan cheese and bouquets of Mâche.
