Mâche Notes 2004

We have been eating Mâche in Germany (known there as feldsalat) our entire lives, and we were thrilled to see a bag of it on the shelf in a Whole Foods. We like to eat it as a salad with sautéed duck or goose livers on top and a warm vinaigrette. ---C. & H. W., Twain Harte, California

Greetings! I was so glad to hear the NPR report about my favorite green this month! As a teacher of French who features cuisine in the curriculum, I’m interested in perhaps receiving a promotion kit of sticker or coupons or recipes related to Mâche. Two summers ago in France, Mâche was all we ate as we fixed our meals while studying in Paris. I’ve liked it for over 30 years, but the seeds or the fresh Mâche are hard to find! I met you the other day at Whole Foods and you kindly introduced me to Mâche after seeing me with spinach. We have just sat down to dinner and the salad was mâche with fresh roasted beetroot, walnuts, avocado and a touch of light salad dressing. I have to say that the whole thing was a very big hit. As you had said, the children loved it (they are big veggie eaters) and one of the kids would like it in their packed lunch tomorrow!!! It was nice to meet you and I hope that we will bump into each other again. Thank you for the tip and I look forward to more recipes.

Almost on the Payroll... I would just like to say THANK YOU! I have been smuggling Mâche /soncino/feldsalat/grunsalat seeds from Europe for years, but I have a tough time growing them as they tend to bolt if you aren’t watching them every minute. I always stand next to the salad greens section of the grocery store and encourage people to give it a try. Now Fred Meyer, a Huge chain in Portland is carrying Mâche and I think my hard work has paid off.
